DIY Granola Recipe

That classic crunchy, chewy, sweet goodness that mushes in milk and passes for a health food: granola. We all know it, love it, and give ourselves a giant pat on the back when we opt for it over cereal. However, most granola is loaded with sugar and unnecessary simple carbohydrates that will spike our blood sugar first thing in the morning leaving us to yard sale into that afternoon crash. Time to get grain-free and sugar-free with our granola, restoring its reputation as one of America’s favored “health foods.” This paleo, keto, vegan granola is excellent for breakfast on top of Kite Hill Foods unsweetened Greek yogurt, great as an on the go snack, or perfect for a little post dinner parfait.

Ingredients  

1/2 cup unsweetened coconut 

1/2 cup thinly sliced almonds

1/2 cup chopped pecans

1/2 cup sunflower seeds

1/4 cup lakanto

1 tbsp melted coconut oil

1 tbsp ceylon cinnamon

1/2 tsp vanilla powder/extract

Instructions

Preheat oven to 350°F

Place all dry ingredients into a large bowl

Cover dry ingredients with oil and seasoning

Mix well

Cover a baking sheet with parchment paper and spread mixture evenly on sheet

Bake for 10-12 minutes or until golden brown

Remove and let the granola cool to turn crunchy

Once cool break up granola and store!
