It’s called resistant starch because it is resistant to digestion functioning similar to soluble fiber. Basically...you’re more likely to poop it out than store it.
Green bananas are low on the glycemic index falling between 40 & 60. Yellow bananas go all the way up to 110 as they ripen, and a brown banana...well let’s just say brown is best reserved for the toilet bowl as its’ GI shoots up to 130.
